True traditional products are those that have the characteristics necessary to be able to place in a specific territory and a particular type of production elsewhere is not reconstructed. In Italy the traditional products are a constant: each territory, each province, each country reality has kept his recipes of Italian cooking and preparation that make them special and unique. 
In fact, the typical products will then be specialized area to area, from country to country even when the names that distinguish them do not seem to communicate anything unique. In the tradition of Gesualdo, for example, products like sausages, the soprpessata or capicollo that may be in the traditional cuisine of many other parts of Italy, took their specificity, which, unfortunately, the name (because of its vagueness) sometimes fails to communicate.
