- Taurasi D.o.c.g.
Recognized as D.O.C.G. since 1993, Taurasi
is definitely the most prestigious red wine of the Irpinia area.
Imported by the Greeks, the high quality Aglianico vine has found its
best expression on the soil of the green Irpinia hills. Opera is the
result of the vinification of pure Aglianico grapes from the Pesano
vineyard. This clayey-calcareous soil that faces South at 300 meters
a.s.l. produces a full-bodied, complex Taurasi that undergoes an
extremely long ageing process.

own vineyards on the South side of the Pesano hill, in the area of the
Taurasi D.O.C.G. appellation.
Soil type:
clayey-calcareous.
Vinification:
grapes are
hand-picked during the first ten days in November and selected in the
vineyard and in the cellar. Grapes undergo a pre-fermentation cold
maceration to optimize color extraction and fruity aromas. Alcoholic
fermentation follows with
a long maceration of the skins in order to extract the Aglianico
tannins
with gentle techniques. The wine is then aged into French oak
barriques (Allier and Tronçais), during 18 months and is
then left to
age in the bottle for a further 12 months.
Organoleptic features:
colour: deep ruby red. Nose: complex aromas of ripe red fruits in
alcohol, dried prunes and spices. Mouth: full-bodied with a good
presence of fine tannins. Full and enveloping with a long intense
finish.
Food match:
particularly
suited to accompany roast meats, games, full-flavoured cheeses and
salami. Uncork and decant one hour before serving at a temperature of
20°C
