NESTOR
- Greco di Tufo D.o.c.g
The Greco
di Tufo
vine was cultivated in south of Italy before Rome was founded and has
found its best expression on the volcanic hills of the Tufo countryside
area. In Homeric poems Nestor is described as a hero of extraordinary
physical strength who liked to indulge himself in drinking this nectar.
The chalice from which only he drank bore the following inscription:
“I
am Nestor’s cup it is good to drink from. Whoever drinks from
this cup
will be seized by desire for Aphrodite with the beautiful
crown”.
Grape variety: 100%
Greco di Tufo.
Production area: vineyards
located in the hilly area of the Greco di Tufo D.O.C.G. appellation.
Soil type: clayey
with volcanic elements.
Vinification:
grapes are hand-picked, placed in 20-kg crates and selected in the
cellar. The whole grapes are then dropped into the press.
Light
pressings are then cold decanted to eliminate turbidity. During
alcoholic fermentation temperature is kept low at
15°C-18°C. The wine
is left to age on thin lees. Ageing continues in the bottle for a
further 2 months.
Organoleptic features:
Colour: intense yellow with golden hues. Nose: a complex aroma of white
and citrus fruits with a mineral note. In the mouth: the wine is full,
rich, suave with a long persistence.
Food match: suited
to accompany sapid fish and shellfish dishes, elaborate pasta dishes
with truffle and mushrooms. Pleasant with white meats. Serve at a
temperature of 10° C
